This week, I NEED to draw your attention to this wrap of champions. This is a great example of where cream of the crop ingredients are combined to create pure perfection. Godfather of pork? Obviously bacon. King of the fish? It’s got to be salmon. Superstar of veg? Bow down to the avocado.
The flaked pieces of Salmon work magnificently with the smoked crisp bacon and creamy smashed avocado; it’s a match made in heaven. I’m amazed it’s taken me so long to discover this and it’s become my inspiration to combine more of my favourite foods.
Do you sometimes get that feeling there’s something missing in your life? I’m pretty sure if you look close enough it’s a salmon, bacon & avocado wrap shaped hole that’s waiting to be filled.
1 salmon fillet
2 rashers of smoked bacon
1 tortilla wrap
A handful of rocket leaves
- Heat the oven to 180°. Squeeze the lime over the salmon and season with salt and pepper. Cook this for 20 minutes.
- Whilst the salmon cooks, prepare the avocado by mashing slightly with the back of a fork and spreading it on the wrap.
- Fry the bacon in a frying pan, flipping occasionally. Fry until crisp or as desired.
- Remove the salmon once cooked and flake with a fork. Layer the wrap with the salmon, bacon and finally a handful of rocket.
