The Falafel Wrap

If you’re like me, it’s around about now that you realise the gravity of your new year’s resolutions. Three weeks in and the outlook of healthy eating, exercise and generally being a better human becomes so much clearer and daunting.

Well, I believe in us! And this falafel wrap will help us on our way- not least because its vibrancy is a great distraction from the dull January weather.  In particular, this sandwich is perfect for those trying out veganuary, vegetarianism or simply different foods!

Whether you have a new year’s resolution, or your still going strong on your holiday diet of booze and cheese, this is the ultimate pick me up and mood booster.

For the falafel I used Jamie Oliver’s recipe.

Ingredients: Makes 2

For the Falafel:
800g chickpeas
Zest of 1 lemon
1 tbsp harissa
1 tsp allspice
1 tbsp plain flour
1 bunch of coriander stalks
Olive oil

For the wrap:
2 tortilla wraps or flatbreads
½ yellow pepper, sliced into strips
2 tbsp pickled red cabbage
Handful of watercress
1 beetroot, thinly sliced
2 tbsp of greek yoghurt (optional)

Method:
1. For the falafel, blitz all the ingredients in a food processor, adding a little oil if necessary to soften the mixture. Scrape out the mixture with wet hands and form 12 small patties about 1.5cm thick.
2. Heat 1tbsp of oil and fry the patties, flipping occasionally until brown and crisp on both sides.
3. Assemble the wraps by layering the watercress, peppers, red cabbage, beetroot and finally a couple of falafel patties for each wrap.
4. Drizzle the yoghurt over the top of each wrap and enjoy!
