The Green Goddess

The season of indulgence is upon us! Never is there a better excuse for that sixth mince pie or bottle of mulled wine. Putting on a few pounds during the festive period is practically a rite of passage in my books but I can’t deny that my body sometimes craves a mini detox. This week that came in the form of the green goddess sandwich. So if anyone else out there, like me, is looking for a healthy (in the loosest sense of the word) sandwich, then look no further*.

Creamy avocado and mozzarella is paired with spinach leaves and a zingy green goddess dressing. Speaking from experience, it’s the perfect pick-me-up after the office Christmas party- try it out for yourself!

*OK, it’s really not that healthy…but it’s got the word ‘green’ in it and that makes it all OK. OK?

Ingredients (Makes 1 Sandwich)

For the dressing:
2 fillets of tinned anchovies
3 tbsp mayonnaise
Juice of half a lemon
2 tbsp chopped tarragon
2 tbsp chopped basil
2 tbsp chopped chives

2 slices of multi-grain bread
1/2 Avocado, sliced
Half a ball of mozzarella, sliced
A handful of spinach

Method:
1. Blend all ingredients for the dressing in a food processor until a consistent texture. Add mayonnaise to thicken if you wish.
2. Spread the dressing onto both pieces of bread. Now compile the sandwich using the spinach leaves then avocado and mozzarella slices.
