Chicken, Avocado & Basil Aioli

What’s to dislike about this sandwich? If your answer is anything but ‘good god nothing at all’ then I advise you reassess your life choices. This is an Aussie favourite and for good reason. It’s juicy and feels totally indulgent yet it tastes so fresh. Mellow flavours from the avocado and chicken are cut through by the aioli (got to be the sauce of the summer) which brings intense garlic and basil to the mix. And all ingredients that won’t ruin the plan for that Aussie summer bod, RIGHT!?


1 brown roll or ciabatta

1 Chicken breast

1 tomato, thinly sliced

1/2 avocado

For the aioli:

1 egg yolk

A handful of fresh basil

1 garlic clove, sliced

Juice of 1/2 a lemon

1 tsp Dijon mustard

285ml olive oil

1. Heat the oven to 180. Lightly pepper the chicken and oven bake for 25 minutes.
2. For the aioli, combine all ingredients in a food processor.
3. Split the roll and start to layer your sandwich, first with the avocado then slices of the cooked chicken, the tomato and finally a generous drizzle of aioli.
