The weekend is all about fantastic breakfast food; being a little more lavish in our choices and spending more time appreciating the most important meal of the day. Enter this sandwich … the ultimate indulgent gooey toasty.
Tangy goats choose is paired with sweet figs, honey and fruit bread. But if that isn’t bold enough to get you out of bed on a Sunday morning, hints of basil are added to the mix and the whole thing is finished off with icing sugar. My mind = blown.
I was dubious at first, like you might be feeling now, but this is a breakfast game changer people. I’m in love!
Ingredients: (Makes 2)
Butter
4 slices of fruit bread
150g goats cheese
4 figs (or fig jam), sliced thinly
2 tbsps honey
Handful of fresh basil leaves
2 tbsps icing sugar
Method:
1. Butter the outside of the fruit bread then spread the goat cheese on the unbuttered side of 2 slices. Top with the fig.
2. Drizzle the honey on top and scatter a few leaves of basil.
3. Close the sandwiches with the other slices of bread, butter side up, and dry fry in a hot pan for a couple of minutes until both sides are golden.
4. Sieve the icing sugar over the top.
