The Reuben is like an exotic cheese toastie. An American classic, this sandwich is made up of swiss cheese, pastrami and sauerkraut. Most probably the most unfamiliar ingredient to us brits is the Sauerkraut. Fermented cabbage doesn’t sound all too appealing but with it’s slightly sour taste and crunchy texture is a winner when it comes to jazzing up a sarnie. Plus, there’s lots of talk nowadays around the health benefits of fermented food whereby good bacteria is enhanced.
4 slices of pastrami
2 slices of swiss cheese
2 slices of granary bread
2 tbsp sauerkraut
1 tbsp butter
1 tbsp mayonnaise
1. Spread even layers of butter on both slices of bread, placing one butter side down in a low heated pan.
2. Spread the non-butter side of bread with the mayonnaise, 1 slice of swiss cheese and the pastrami.
3. Top with the sauerkraut, second slice of cheese and remaining slice of bread, butter side facing up.
4. Use a spatula to press down on the sandwich in the pan and flip until brown on both sides.
